What each ingredient does

Cucumbers
Provide the bulk of the pickle and a crisp, fresh texture after brining.
Onions
Add sweetness and body that softens and blends into the pickling liquid.
Coarse sea salt
Draws water out of the vegetables, firming them and reducing their moisture before cooking.
Brown sugar
Adds sweetness that balances the sharpness of the vinegar.
Vinegar
Provides the acidity that preserves the pickle and gives it its tang.
Dry mustard
Adds sharp, pungent flavor that deepens the spiced character of the pickle.

The step that matters

Draining after the overnight salt. The salted vegetables release a lot of liquid. Draining them well keeps the pickle from becoming watery and lets the vinegar and spices cling to the pieces.
