Peach Cream

Ingredients

Directions

Prepare

  1. Peel and finely chop the peaches, then mash them into a jam-like consistency.

  2. In a bowl, combine the mashed peaches with the cream and milk, mixing well.

  3. If cream is unavailable, dissolve 1 ounce of gelatine in 1 cup of water, boil the milk, and mix it with the gelatine when cooled, then combine with the peaches.

  4. Sprinkle the peeled peaches with 2 cups of powdered sugar and mash quickly or run through a colander.

Freeze

  1. Fold the peach mixture into the whipped cream until well combined.

  2. Pour the mixture into a freezer, reserving about ¼ for later.

  3. As the cream begins to freeze, add the reserved mixture and cut down the frozen cream from the sides of the freezer.

  4. Beat the mixture with a strong spoon whenever the freezer is opened until it reaches the desired consistency.

Store

  1. Cover the freezer with newspapers to keep the air out and set aside until ready to serve.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Ripe peaches
Provide the main fruit flavor and body once mashed into the base.
Cream
Adds fat that makes the ice cream rich and smooth.
Rich milk
Adds dairy flavor and body to the mixture.
Sugar
Adds sweetness and lowers the freezing point, keeping the texture softer.

The step that matters

Beating the mixture during freezing. Breaking up ice crystals as they form keeps the ice cream smooth. Letting them grow large makes it coarse and icy.

Swap the peach

How well each one fits the dish's main ingredients (cream, milk, sugar):

  1. Vanillafits better
  2. Strawberryfits better
  3. Figfits about as well
