Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beef shank
Gives the broth its meaty flavour and body as it simmers.
Flour
Thickens the soup slightly when mixed with milk and stirred in.
Lima or butter beans
Add starch and body, making the soup heartier.
Irish potatoes
Release starch into the broth, adding body and thickness.
Tomatoes
Add acidity and a bright, savoury tang to the broth.

The step that matters

Skim the soup before straining. Fat rises to the surface as the broth simmers; removing it before straining keeps the soup clear and prevents a greasy mouthfeel.
