Why it works: Pepper and parsley match in chemistry and in kitchens. They rank in the top 2% of all ingredient pairs, and cooks put them together in 34,122 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

Veal Steak

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Grill

  1. Beat the veal steak until tender.

  2. Place the steak on a grill over hot coals.

  3. Cover the steak with a tin plate to prevent it from drying out.

  4. Turn the steak until well done.

  5. Press the steak with a knife and fork.

Butter and season

  1. Transfer the steak to a plate of hot melted butter.

  2. Let the steak absorb the butter.

  3. Place the steak on a serving dish.

  4. Season the steak generously with salt and pepper.

  5. Pour the remaining melted butter over the steak.

Finish and serve

  1. Place the steak in a 350°F (175°C) oven for a few minutes, but do not let it fry.

  2. Sift grated cracker over the steak.

  3. Garnish the steak with parsley before serving hot.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal steak
Forms the main body of the dish, cooked until tender and well done.
Melted butter
Adds richness and moisture, soaking into the steak to keep it juicy.

The step that matters

Turn the steak until well done. Veal cooked over hot coals can dry out quickly if left too long, so the cook must watch closely. The tin plate cover helps trap moisture while the meat cooks through.

Swap the parsley

How well each one fits the dish's main ingredients (veal, butter, pepper):

  1. Parsleythe original
  2. Sagefits about as well
  3. Thymefits less well
  4. Tarragonfits less well

Fit is the average pairing score against veal, butter, pepper. Candidates are from the same food group and used in at least 100 recipes.
