Assemble and serve

  1. Add the chopped chicken, celery, yellow pickle, and stale bread crumbs.

  2. Season with salt and pepper to taste.

  3. Pour the dressing over the salad just before serving.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Boiled chicken
Provides the main body of the salad as tender, bite-sized meat.
Raw egg yolk
Emulsifies the oil and vinegar into a thick, smooth dressing.
Hard-boiled egg yolks
Add richness and a smooth, creamy texture to the dressing.
Oil
Adds fat and body, giving the dressing its creamy richness.
Celery
Adds crisp texture and fresh flavor to the salad.
Stale bread crumbs
Absorb dressing and help give the salad body.

The step that matters

Adding the oil to the mustard and yolk. Oil must be added slowly, drop by drop, while stirring constantly. Adding it too fast breaks the emulsion, so the dressing separates instead of becoming thick and smooth.

Swap the celery

How well each one fits the dish's main ingredients (chicken, mustard, egg, vinegar, bread, pepper):

  1. Tarragonfits better
  2. Capersfits about as well
  3. Garlicfits about as well
  4. Celerythe original

Fit is the average pairing score against chicken, mustard, egg, vinegar, bread, pepper. Candidates are from the same food group and used in at least 100 recipes.
