What each ingredient does

Vinegar
Provides the acidity that preserves the cucumbers and gives the pickle its sharp flavor.
Brown sugar
Balances the vinegar's sharpness with sweetness and adds molasses-like depth to the brine.
Cucumbers
Form the main body of the pickle, softening as they cook in the spiced brine.
Onions
Add sweetness and soften in the hot brine, becoming tender and absorbing the spiced flavor.
Cloves
Contribute warm, aromatic spice that flavors the brine throughout the pickling.

The step that matters

Boil until the cucumbers are tender. Cucumbers need enough heat and time for the spices and acid to penetrate and soften the flesh. Undercooked cucumbers stay firm and crunchy, and the brine may not flavor them evenly.
