What each ingredient does

Cucumbers
Provide the crisp, bulky body of the pickle once salted and cooked.
Onions
Add bulk and mild sweetness that softens during the long simmer.
Green tomatoes
Add firm texture and tartness that balances the sugar and spices.
Brown sugar
Adds sweetness and helps balance the sharp vinegar and salt.
Vinegar
Provides the acidity that preserves the vegetables and sharpens the flavor.
Coarse sea salt
Draws water out of the vegetables overnight, firming them and reducing sogginess.

The step that matters

Salting overnight and draining. Salt draws water out of the vegetables by osmosis. Draining well before cooking removes excess brine, so the pickle does not turn watery or overly salty once vinegar and sugar are added.
