Strawberry Wine
Ingredients
Directions
Prepare the juice
Mash the strawberries and add ½ gallon of boiling water to each gallon of fruit.
Let the mixture stand for 24 hours, then strain it.
Add 3 pounds of brown sugar to each gallon of juice.
Let the mixture stand for 36 hours, skimming off any impurities that rise to the top.
Ferment in the cask
Transfer the mixture to a cask, reserving some juice to add as it escapes.
Fill the cask each morning.
Cork and seal the cask tightly after fermentation is complete.

What each ingredient does
- Strawberries
- Provide the flavour and the fruit juice that ferments into wine.
- Brown sugar
- Feeds the yeast during fermentation, producing alcohol and carbon dioxide.
- Boiling water
- Extracts juice from the mashed fruit and dilutes it to a workable liquid.
The step that matters
Filling the cask each morning. Fermentation pushes foam and gas out of the cask, so the level drops. Topping up with reserved juice keeps air out of the liquid, which limits spoilage and oxidation.
