What each ingredient does

Beef
Provides the main meat, which becomes tender as it cooks slowly in its own juices.
Flour
Thickens the hot juices into a smooth sauce as it is mixed in.
Fat from the beef
Carries flavor and helps the flour blend smoothly into a sauce.

The step that matters

Pouring the flour mixture into the hot juice. Flour mixed with fat should be stirred until smooth before it goes into the hot juice, so it does not clump. Adding it to hot liquid is what lets the starch thicken the sauce evenly.
