Apple Custard

Oven, in the book's wordsA quick oven

Ingredients

Directions

The book says “a quick oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

  1. Beat the eggs very light.

  2. Gradually stir in the sweet milk.

  3. Mix all together and pour into a deep dish.

  4. Bake at 350°F (175°C) for twenty minutes.

  5. For the topping, beat the egg whites to a stiff froth and sweeten with powdered sugar.

  6. Flavor the egg whites to taste and spread over the baked custard.

  7. Return to the oven and bake until light brown.
