Raspberry Vinegar

Ingredients

Directions

Infuse the vinegar

  1. Combine 1 quart of vinegar with 2 quarts of raspberries and let them sit for 24 hours.

  2. Strain the mixture through a sieve without squeezing the raspberries.

  3. Repeat the process with another 2 quarts of raspberries, letting them sit for 24 hours again.

  4. Add a third quantity of raspberries and drain the mixture one last time.

Sweeten and finish

  1. Measure the resulting liquid into a stone jar and add 1 pound of lump sugar.

  2. Place the jar in a pot of boiling water and let it boil for 10 minutes, stirring to dissolve the sugar.

  3. Allow the mixture to cool.

  4. Bottle it for use.

What each ingredient does

Raspberries
Provide the fruit flavour and aroma that the vinegar takes up over repeated steeping.
Vinegar
Extracts and carries the raspberry flavour and adds the sharp acidity that defines the syrup.
Lump sugar
Sweetens the infused vinegar and balances its acidity.

The step that matters

Dissolving the sugar in the boiling water bath. Sugar must fully dissolve into the warm liquid so it does not settle or crystallise in the jar. Stirring while the jar heats helps the sugar dissolve evenly.
