Why it works: Sage and pepper match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 5,388 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓

Pork to Roast

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. Wash and dry the leg of pork.

  3. Score the skin in diamonds about an inch square.

Stuff and season

  1. Make stuffing with grated bread, sage, chopped onions, pepper, salt, and moisten with egg yolk.

  2. Stuff the mixture under the skin and in incisions in the meat.

  3. Rub powdered sage into the scored skin.

  4. Brush the skin with sweet oil or butter for crispness.

Roast and serve

  1. Roast for 3.5 hours, basting with oil or butter at intervals.

  2. Skim fat from the gravy and thicken with butter rolled in flour before serving.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Leg of pork
Provides the main meat, which becomes tender and juicy during long, slow roasting.
Grated bread
Absorbs moisture and juices in the stuffing, keeping it soft rather than dense.
Egg yolk
Binds the stuffing so it holds together when cooked inside the meat.
Sweet oil or butter
Conducts heat to the skin and adds fat that helps it turn crisp and golden.
Flour
Thickens the pan juices into a smooth gravy when cooked with butter.

The step that matters

Brush the skin with sweet oil or butter for crispness. Skin is mostly collagen and moisture; a thin coat of fat helps it dry and blister in the oven, so it crackles instead of staying leathery. Drying the skin well first also helps.

Swap the onion

How well each one fits the dish's main ingredients (pork, bread, sage, pepper, egg, butter, flour):

  1. Capsicumfits better
  2. Shallotfits better
  3. Chivefits better
  4. Onionthe original

Fit is the average pairing score against pork, bread, sage, pepper, egg, butter, flour. Candidates are from the same food group and used in at least 100 recipes.
