Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sugar
Provides sweetness and the bulk of the syrup's body.
Tartaric acid
Adds sharpness and helps keep the syrup tart and balanced.
Egg white
Binds impurities during boiling so they can be skimmed off, clarifying the syrup.
Lemon juice
Supplies the main lemon flavour and additional acidity.

The step that matters

Adding the egg white and boiling. The egg white must be stirred in and then boiled so it coagulates and traps impurities, which rise and can be skimmed away. Boiling too gently may leave the syrup cloudy.
