What each ingredient does

Cold boiled potatoes
Provide starch and body that bind the fish and give the cakes a soft, mashed texture.
Remnants of cold fish
Supply the main protein and flavour, forming the bulk of the cakes.
Milk
Adds moisture to the mashed potato, keeping the mixture soft and easy to shape.
Mushroom ketchup or anchovy sauce
Adds savoury depth and salty umami flavour to the fish and potato mixture.
Fat for frying or clarified dripping or cold bacon fat
Conducts heat to brown the outside of the cakes and adds richness.

The step that matters

Bake in a 400°F (200°C) oven until brown and very hot.. The cakes must be heated through and browned on the outside. Thin, flat cakes can dry out or stay pale if the heat is too low or they are removed too early, so watch for a golden surface.

Swap the potato

How well each one fits the dish's main ingredients (fish, milk, mushroom, pepper):

  1. Capsicumfits about as well
  2. Potatothe original
  3. Tomatofits about as well
  4. Asparagusfits less well

Fit is the average pairing score against fish, milk, mushroom, pepper. Candidates are from the same food group and used in at least 100 recipes.
