What each ingredient does

Eggs
Bind the batter and help the pancakes set when fried.
Bread crusts
Provide the bulk and body of the batter, taking the place of much of the flour.
Flour
Adds structure to the batter so the pancakes hold together in the pan.
Milk
Adds moisture and loosens the batter to a pourable consistency.
