What each ingredient does

Eggs
Bind the bread crumb coating to the oysters and help it set and brown.
Grated bread crumbs
Form a crisp golden crust that protects the oyster while it fries.
Butter and lard
Provide the frying fat, carrying heat evenly and adding richness and browning.

The step that matters

Fry the oysters until golden brown, being careful not to burn the fat.. The fat must be hot enough to brown the crumb coating quickly, but if it overheats the butter solids darken and burn, making the crust bitter and leaving the oyster undercooked in the middle.
