Veal Steak

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Beat the veal steak until tender.

  2. Place the steak on a grill over coals and cover it with a tin plate to prevent it from becoming hard and dry.

  3. Turn the steak and when well done, press it with a knife and fork into a plate of hot melted butter.

  4. Let the steak absorb as much butter as possible, then transfer it to a serving dish.

  5. Season generously with salt and pepper, and pour the remaining melted butter over it.

  6. Place in a 350°F (175°C) oven for a few minutes, but do not let the butter fry.

  7. Sift grated cracker over the steak and garnish with parsley before serving hot.
