What each ingredient does

Green and tender walnuts
Are the main ingredient, softened by brining and boiling until tender.
Strong vinegar
Acidifies the pickling liquid, preserving the walnuts and giving them their sharp flavour.
Sugar
Balances the sharpness of the vinegar with sweetness.
Ginger
Adds warm, aromatic pungency to the pickling liquid.
Garlic
Adds pungent aroma and savoury depth to the pickling liquid.
Horseradish
Adds sharp, pungent heat that mellows during the long rest.

The step that matters

Boil the walnuts until soft, then rub them. Boiling softens the walnuts enough to be pickled, and rubbing removes their skins and bitterness. Skipping or shortening either step leaves the pickle tough or bitter, since the walnuts are not cooked later.

Swap the mace

How well each one fits the dish's main ingredients (walnut, vinegar, ginger, garlic, horseradish, pepper, orange):

  1. Allspicefits better
  2. Turmericfits better
  3. Clovefits better
  4. Macethe original

Fit is the average pairing score against walnut, vinegar, ginger, garlic, horseradish, pepper, orange. Candidates are from the same food group and used in at least 100 recipes.
