Why it works: Nutmeg and flour are a kitchen classic. They rank in the top 8% of all ingredient pairs, and cooks put them together in 18,623 recipes. Both carry isobutyraldehyde, which smells malty, green. The science ↓
Wine Sauce
Ingredients
Directions
Make the sugar base
Dissolve the sugar in a little water and boil until nearly candied.
Add a little water to the stewpan and let it boil.
Add the butter and wine
Roll the butter in a little flour and stir it into the boiling water quickly.
Then add the sugar, and lastly the wine.
Add the butter just before removing from heat, then stir in wine and nutmeg to taste.
Let it simmer briefly and grate nutmeg on top before serving.
Variations
For a large pudding, melt butter, sugar, and Madeira wine together in a stewpan.
For another variation, cream the butter and egg yolks together, then mix in brown sugar and wine.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Butter
- Enriches the sauce with fat, giving it a smooth, rich mouthfeel.
- Sugar
- Sweetens the sauce and, when boiled, thickens it into a syrup.
- Egg yolks
- Add richness and emulsifying power, helping the sauce turn smooth and creamy.
- Wine
- Adds acidity and aromatic flavour that defines the sauce.
The step that matters
Add the butter to the boiling water quickly. Butter rolled in flour and stirred into boiling liquid needs quick, constant stirring so the fat disperses evenly instead of separating or clumping into greasy lumps.
Swap the nutmeg
How well each one fits the dish's main ingredients (sugar, egg, butter, wine, madeira wine, flour):
- Cinnamonfits about as well
- Nutmegthe original
- Thymefits less well
- Tarragonfits less well
Fit is the average pairing score against sugar, egg, butter, wine, madeira wine, flour. Candidates are from the same food group and used in at least 100 recipes.
