What each ingredient does

Chicken
Provides the meat and the flavoured cooking liquid that becomes the base of the sauce.
Egg
Thickens the milky liquid into a smooth, lightly set sauce when gently heated.
Flour
Helps thicken the egg and milk mixture so it coats the toast rather than running off.
Milk
Adds richness and body to the sauce, softening its flavour and texture.
Butter
Adds fat for a rounded, silky mouthfeel in the finished sauce.

The step that matters

Stirring the egg mixture into the hot liquid. Egg proteins set when heated, so if the liquid is too hot or added too fast the egg can curdle or scramble instead of thickening the sauce smoothly.

Swap the onion
