Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Cut the cooked salmon into small pieces.

  2. Prepare the sauce as you would for hot boiled fish.

Assemble and bake

  1. Mix the salmon with the sauce and place in shells or small china cups.

  2. Sprinkle bread crumbs on top of each cup.

  3. Bake in a 400°F (200°C) oven for ten minutes.

Serve

  1. Garnish with a sprig of parsley.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cooked salmon
Forms the main body of the filling and provides the flavor and protein base.
Sauce for hot boiled fish
Adds moisture so the salmon filling stays tender rather than dry during baking.
Bread crumbs
Form a crisp, golden topping through browning in the oven.

The step that matters

Baking the cups. Salmon is already cooked, so the bake mainly heats the filling through and browns the crumbs. Too long in the oven can dry the fish and toughen the sauce, so watch the crumbs for color and stop once the cups are hot.

Swap the parsley

How well each one fits the dish's main ingredients (salmon, sauce, fish, bread):

  1. Capersfits better
  2. Gingerfits about as well
  3. Parsleythe original
  4. Tarragonfits about as well

Fit is the average pairing score against salmon, sauce, fish, bread. Candidates are from the same food group and used in at least 100 recipes.
