Crab Apple Jelly

Ingredients

Directions

Prepare the juice

  1. Wash and halve the crab apples, removing the stems.

  2. Place the crab apples in a jelly pan and cover with 3 cups of water.

  3. Boil until soft, then strain the mixture through a jelly bag.

  4. Boil the juice for 25 minutes.

Make and set the jelly

  1. In a separate bowl, warm 1 cup of sugar in the oven.

  2. Combine 1 cup of juice and the warmed sugar, then boil for 7 minutes.

  3. To test for jelling, place a small amount on a plate; if it jells, pour into tumblers.

  4. Place a spoon in each tumbler to prevent cracking.

The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Crab apples
Provide the pectin and tartness that let the juice set into jelly.
Sugar
Sweetens the jelly and helps it set firm when boiled with the juice.

The step that matters

Testing for jelling. Jelly sets only when enough pectin, acid and sugar are concentrated by boiling. Testing a small amount on a cold plate shows whether it will gel before the batch is poured into tumblers, so the cook can keep boiling if it is still too runny.

Swap the apple

How well each one fits the dish's main ingredients (crab, sugar):

  1. Raisinfits better
