Haunch of Mutton

Ingredients

Directions

  1. Cut the haunch of mutton as you would a haunch of venison.

  2. Slice the orange or lemon in half, sprinkle with salt and pepper, and squeeze the juice over the meat.

  3. Place a little cold or melted butter between the two halves of the meat.

  4. Serve the shoulder separately, and divide the ribs as desired.
