Game Soups

Ingredients

Directions

  1. Add enough flour to thicken the soup and a little cold stock to form a stiff paste.

  2. Moisten the paste occasionally with broth from fresh beef.

  3. Pass the mixture through a sieve when fine enough.

  4. Add the gravy from the stewed heart and enough beef broth to achieve the desired quantity of soup.

  5. Bring to a boil and season with cayenne and coarse sea salt.

  6. If not thick enough, add flour and butter until it reaches the consistency of good cream.

  7. Stir in a spoonful of sugar and a little port wine for improvement.
