Soyer’s Boiled Braised Turkey

Ingredients

Directions

  1. Truss the turkey by cutting the neck and legs, then running your finger inside to raise the skin of the legs and tuck them under the apron.

  2. Place the liver and gizzard in the pinions, turn the small end of the pinions on the back, and use a needle and string to secure the wings and legs.

  3. Stuff the turkey with the chopped oysters mixed into the stuffing.

  4. Rub the breast with half a lemon and place the turkey in a large pan.

  5. Cover the turkey with cold water and add butter, salt, onions, celery, carrot, turnips, parsley, bay leaves, and thyme.
