Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Make the batter

  1. Cream together the sugar and butter until light and fluffy.

  2. Beat the yolks of the eggs until frothy, then add to the mixture.

  3. Incorporate the egg whites.

  4. Gradually add the sifted flour and mix well.

  5. If desired, stir in the citron or powdered almonds and brandy just before pouring into pans.

Bake

  1. Pour the batter into pans lined with buttered paper.

  2. Bake in a 400°F (200°C) oven for about 20 minutes, covering with thick paper if it bakes too quickly.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Creamed with sugar to trap air, giving the cake a light, tender crumb and rich flavour.
Eggs
Yolks add richness and emulsify the batter; whites add lift and structure as the cake bakes.
Sifted flour
Provides the main structure that sets as the cake bakes.
Sugar
Creams with butter to hold air and adds sweetness and gentle browning.

The step that matters

Covering the cake if it bakes too quickly. High oven heat can brown and set the outside before the centre is cooked through. Covering with thick paper slows surface browning so the interior can cook evenly.

“What each ingredient does” and “The step that matters” were written by Claude from this recipe’s own method and reviewed in samples by CompKitchen.
