Caramelized Pineapple Upside Down Cake

This isn’t your usual canned pineapple and Maraschino cherry upside down cake. Fresh caramelized pineapple and vanilla infused caramel glaze soak into the inverted moist buttermilk cake with an elusive hint of tropical coconut flavor making this cake something that won’t be forgotten easily. The elusive coconut flavor comes from double hit of coconut oil and coconut flour, both of which imparting coconut flavor without any stringy coconut bits. If you don’t have access to either, just substitute melted butter for the coconut oil and all purpose flour for the coconut flour. You won’t get the coconut flavor, but you’ll still get a wonderfully moist rich cake.
