Ingredients

Directions

Prepare

  1. Prepare rice, set aside to keep warm.

  2. Simmer onions, broth, mirin, soy, and seasonings in a large pan over low heat for 15 minutes.

  3. Meanwhile beat the eggs in a large bowl.

  4. Mix flour, salt and pepper in a plate and pour panko in another plate.

Bread and fry

  1. Dredge pork in flour, dip into eggs, dip into panko, then dip into eggs again and back into panko. Double dipping ensures a nice crust.

  2. Cook in oil until browned on both sides, drain on paper towels.

Finish and serve

  1. Dip cutlets into broth, warm for 1 minute, slice and serve over rice, ladle onion broth over, sprinkle with scallions.

What each ingredient does

Pork cutlets or chicken cutlets
Forms the main protein, which is breaded and fried until browned and cooked through.
Eggs
Bind the flour and panko coating to the cutlet and help it set into a crisp crust.
Panko
Provides a coarse, dry crumb that fries up light and crunchy.
Basmati rice
Serves as the base that soaks up the sweet savory broth.
Onions
Soften and sweeten in the simmering broth, adding savory sweetness to the sauce.
Soy sauce
Adds salty, savory depth and colour to the simmering broth.

The step that matters

Double dipping the cutlets. A second egg and panko coat builds a thicker, more even crust that holds up better during frying and resists sogginess from the broth.
