Ingredients

Directions

Prepare

  1. Whisk together sour cream, chicken broth, curry powder, Chinese five spice powder, hot pepper oil, and crushed red pepper flakes in a large bowl, then set aside.

  2. Cut chicken into cubes or strips.

  3. Slice onion into medium-sized pieces.

  4. Cut the carrots if you want to.

Cook

  1. Place chicken, carrots, and onion into a large pot on the stove.

  2. Pour the broth mixture into the pot, gently stirring the ingredients together.

  3. Bring almost to boiling over medium-high heat, reduce heat to low, cover, and simmer 1 to 1.5 hours, stirring occasionally until the chicken is cooked through and the carrots and onions are tender.

  4. During the last 10 minutes of cooking, stir together the cornstarch and water thoroughly and stir it into the pot to thicken the sauce.

Season and serve

  1. Add salt and pepper to taste and serve over sticky rice.

  2. This can also be prepared in a crock pot or in a 4-qt casserole dish in the oven.

  3. If the oven method is preferred, cook at 325°F for 1 hour 20 minutes.

What each ingredient does

Chicken breasts
Provides the main protein, which becomes tender and cooked through during slow simmering.
Sour cream
Adds richness and a creamy body to the sauce as it simmers.
Chicken broth
Supplies the liquid base that carries the curry flavor and keeps the chicken moist.
Curry powder
Provides the main spice flavor, blooming gently in the warm liquid.
Cornstarch
Thickens the sauce when mixed with water and stirred in near the end.
Baby carrots
Add sweetness and a tender texture to the stew.

The step that matters

Stirring the cornstarch slurry into the pot. Cornstarch must be fully dispersed in cold water before it goes in, and the sauce must be kept simmering, so it thickens smoothly instead of clumping or staying thin.
