Ingredients

Directions

Prepare the dry mix

  1. Preheat the oven to 350 °F (175 °C).

  2. Place the spelt or whole‑wheat flour and the ground rolled oats in a bowl and mix together. Add the nutmeg and mix well. Add the raisins and mix well to ensure the raisins are not sticking together and are thoroughly coated with the flour mixture.

Make the dough

  1. Place the apple juice, bananas, and dates in a high‑speed blender. Cover and run at high speed until all the ingredients are blended and smooth.

  2. Add about three‑quarters of the banana‑date mixture to the flour mixture and mix thoroughly with a stiff spatula or spoon. Gradually add more of the liquid mixture until the desired consistency is reached. If the dough is too stiff after adding all the liquid, add more apple juice. A thinner dough will make flatter cookies; a stiffer dough will make irregular thick cookies. (To test for dough stiffness, stick a soup spoon upright into the dough; if the spoon remains upright, the dough is stiff enough.)

Shape and bake

  1. On a non‑stick or lightly oiled baking sheet, place the cookie dough in twelve equal‑sized mounds. Smooth and shape each cookie with a spoon or spatula as desired.

  2. Place the baking sheet in the preheated oven and bake at 350 °F for 30 minutes. Check after 20 minutes; the cookies should be firm but not hard. Be careful not to over‑bake. When baked, remove from the oven, cool, and enjoy.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Spelt or whole wheat flour
Provides the main structure of the dough, setting as the cookies bake.
Rolled oats
Adds bulk and a chewy, hearty texture to the cookies.
Bananas
Add moisture and natural sweetness, helping bind the dough together.
Dates
Add sweetness and moisture, and help hold the cookie dough together.
Raisins
Add chewy pockets of sweetness throughout the cookies.

The step that matters

Checking the bake time. Banana and date cookies are moist and sugary, so they brown quickly and turn hard if over-baked. Checking early keeps them firm but tender as they cool.

Swap the raisin

How well each one fits the dish's main ingredients (spelt, oats, nutmeg, banana, dates, apple):
