Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Pastry flour
Forms the dough structure that holds its shape while frying.
Yoghurt
Adds moisture and acidity to make the dough tender.
Baking soda
Reacts with the yoghurt's acidity to release gas, helping the dough rise.
Olive oil
Transfers heat to the dough, cooking it quickly and browning its surface.

The step that matters

Fry only a few at a time. Adding too much dough at once drops the oil temperature, so the pieces absorb grease and brown unevenly instead of crisping quickly.
