Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cream cheese
Provides rich body and a creamy, dense texture to the barfi.
Sour cream
Adds moisture and tang, keeping the mixture soft and creamy.
Condensed milk
Supplies sweetness and moisture, helping the mixture set smoothly when chilled.
Flour
Gives the batter structure so it holds its shape when baked and cut.
Baking powder
Releases gas that lightens the batter and gives it a little rise.

The step that matters

Bake until only lightly browned. Baking just until the top is lightly brown sets the structure without drying it out. Over-baking dries and firms the custard, making the barfi crumbly and less creamy after chilling.
