Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Flour
- Provides the structure that holds the cake's layers together after baking.
- Eggs
- Bind the batter and add structure and richness as the cake sets.
- Butter or margarine
- Adds fat for a tender crumb and rich flavor.
- Baking soda
- Reacts with the acidic sour cream and chocolate to lift and lighten the cake.
- Sour cream
- Adds acidity and moisture, giving a tender texture and helping the baking soda react.
- Heavy cream
- Whips into a stable, airy filling and frosting that adds richness.
The step that matters
Beat in the dry ingredients alternately with the sour cream until smooth. Alternating additions keep the batter emulsified and prevent overmixing, which would develop gluten and make the cake tough. Adding the water last, as the record directs, thins the batter for an even, tender crumb.
Swap the cocoa
