Chicken and Mushrooms Over Noodles.
Ingredients
Directions
Make the noodles
Combine flour and 1/4 teaspoon salt on a pastry board and make a well in the center.
Whisk eggs, milk, and olive oil in a bowl until well blended.
Gradually pour the egg mixture into the well in the flour while mixing with fingertips.
Knead the dough about 10 minutes or until it is elastic.
Separate the dough into three pieces, wrap each with plastic wrap, and let sit for about 30 minutes.
Remove the dough and roll each piece flat on a lightly floured countertop as flat as possible without tearing.
Using a knife or pizza cutter, cut the dough into noodles about 1/4 to 1/2 inch wide.
Drop the noodles into a pot of salted boiling water and cook for about 10 minutes.
Drain the noodles and rinse them with cold water.
Set the noodles aside.
Make the chicken sauce
Cut the chicken breasts into small pieces and brown them in melted butter over medium-high heat.
Add the chopped onion to the chicken and cook covered for 5 minutes.
Add the sliced mushrooms, water, salt, and paprika, and mix well.
Bring the mixture to a boil, reduce the heat, and cover.
Simmer for 45 minutes.
Mix the sour cream and flour together until smooth, then add to the pan and stir until the sauce is smooth.
Add the noodles to the pan and bring to a boil.
Reduce the heat and simmer for 5 minutes.
Remove from heat and let sit for about 5 minutes or until the sauce thickens to the desired consistency.
Serve
Ladle the chicken and sauce over the warm noodles and garnish with chopped scallions.

What each ingredient does
- All-purpose flour
- Forms the gluten network that gives the noodle dough its structure and chew.
- Eggs
- Add richness and structure to the noodle dough, helping it hold together when rolled.
- Chicken breasts
- Provide the main protein, browned for flavor before simmering in the sauce.
- Butter
- Adds fat and browning flavor when the chicken is seared.
- Mushrooms
- Release moisture and savory flavor into the sauce as they cook.
- Sour cream
- Adds tang and creaminess, thickening the sauce with the flour.
The step that matters
Mixing the sour cream and flour before adding. Flour mixed into sour cream first disperses evenly and avoids lumps; added directly to hot liquid it can clump. Sour cream can also curdle if it boils hard, so keep the sauce at a gentle simmer once it is in.
