What each ingredient does

Egg
Egg yolk emulsifies with oil to form the mayonnaise base.
Salad oil
Oil forms the fat phase of the mayonnaise, giving it richness and body.
Mayonnaise sauce
Coats the apple pieces, adding creaminess and moisture to the salad.
Milk cream
Mixed into the mayonnaise to make the dressing lighter and smoother.
Walnuts
Add crunch and a nutty flavour that contrasts with the soft apple.
Apple
Provides crisp texture and fresh sweetness as the salad's base.

The step that matters

Pour oil drop by drop into the mixture and mix well. Adding oil slowly lets the egg yolk emulsify it into tiny droplets. Pouring too fast can break the emulsion so the mayonnaise separates and turns runny.

Swap the apple

How well each one fits the dish's main ingredients (sauce, milk, cream, walnut, mustard, egg, sugar):

  1. Vanillafits better
  2. Coconutfits better
  3. Figfits better
  4. Applethe original

Fit is the average pairing score against sauce, milk, cream, walnut, mustard, egg, sugar. Candidates are from the same food group and used in at least 100 recipes.
