Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour
Forms a roux with the butter that thickens the stock into a smooth soup.
Egg yolk
Enriches and thickens the soup when tempered with hot soup and returned to it.
Butter
Carries the flour into a roux and adds richness to the base.
Light cream
Adds richness and smoothness to the egg yolk mixture.
Brown stock
Forms the main liquid of the soup, giving it its savoury flavour.

The step that matters

Whisk some soup into the egg yolk diluted with cream. Adding hot soup to the yolk gradually tempers it, raising its temperature slowly so the egg does not scramble and turn grainy in the soup.
