What each ingredient does

Lean ground beef
Forms the meatballs' main body and provides savory, meaty flavor.
Egg
Binds the meat and crumbs so the meatballs hold their shape.
Cracker crumbs
Absorb moisture and keep the meatballs tender rather than dense.
Tomato soup
Forms the tomato-based gravy that flavors and moistens the meatballs.
Onion
Adds aromatic sweetness and depth to the simmering gravy.

The step that matters

Dropping meatballs into boiling gravy. Adding the meatballs to a gently boiling gravy and cooking them briefly helps the surfaces set so they hold their shape and do not crumble into the sauce. Keeping the gravy at a steady boil during this step matters for that initial set.
