What each ingredient does

Chicken breast
Provides the main protein, which firms as it cooks and turns opaque when done.
Hot italian sausage
Browns to add savory fat and spiced, meaty flavor to the pot.
Dry red wine
Deglazes the browned bits and adds acidity and depth to the simmering sauce.
Pork and beans in tomato sauce
Adds starch, body and sweetness, and thickens the sauce as it heats through.
Onion
Softens and sweetens as it sautés, building the aromatic base.

The step that matters

Draining the fat after browning the sausage. Leaving rendered fat in the pot makes the stew greasy and can keep the sauce from reducing and clinging properly.
