Ingredients

Directions

Make the dough

  1. Dissolve the yeast in the warm water in a large bowl.

  2. Add the milk and sugar and let stand until the surface becomes foamy and the kitchen smells of yeast (about 5 minutes).

  3. Stir in three cups of flour, butter, eggs, orange peel, almond extract, nutmeg, and salt. Beat until very smooth.

  4. Add enough of the remaining flour to form a soft dough.

  5. Turn the dough onto a lightly floured board and knead for 5 to 8 minutes while adding the raisins and almonds a little at a time.

  6. Place the dough in a lightly greased bowl (wash the bowl you started with) and turn it over once or twice to coat it with grease.

  7. Cover the bowl with a towel or wax paper and set it in a warm, quiet place until it has risen to double its size (about 1 hour).

Shape and rise

  1. Turn the risen dough onto a lightly floured board and divide it into threes.

  2. Divide each piece into thirds and, with your hands, roll each into a rope about twenty inches long. Braid the ropes.

  3. For one loaf, place the biggest braid onto a lightly greased baking sheet, the bigger braid on top (press lightly to make it stay), and the big braid on top of that.

  4. For three loaves, arrange the three braids separately on the lightly greased baking sheet.

  5. Let rise again for about an hour.

Bake and serve

  1. Bake in a preheated oven at 350°F for 45 to 60 minutes.

  2. Check at 45 minutes by tapping on the loaf; if it sounds hollow, it is done. (If you make smaller loaves, check at 40 minutes, especially if your oven is fast.)

  3. Optional: While arranging on the baking sheet, brush with a glaze consisting of an egg lightly beaten with 2 tbsp sugar.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Yeast
Produces carbon dioxide gas that makes the dough rise and become light.
Flour
Forms gluten networks that give the dough its structure and chew.
Eggs
Add richness and help bind the dough, adding structure and a tender crumb.
Butter
Adds fat that tenderizes the crumb and contributes richness and flavor.
Sugar
Sweetens the loaf and feeds the yeast, supporting rising and gentle browning.
Orange rind
Adds aromatic citrus oils that give the bread its bright flavor.

The step that matters

Let the dough rise fully before shaping. Yeast needs time in a warm place to build gas and gluten strength. Underproofed dough bakes up dense, while overproofed dough can collapse and lose its structure.

Swap the orange

How well each one fits the dish's main ingredients (milk, sugar, flour, butter, egg, almond, nutmeg):

  1. Raisinfits better
  2. Vanillafits better
  3. Figfits better
  4. Orangethe original

Fit is the average pairing score against milk, sugar, flour, butter, egg, almond, nutmeg. Candidates are from the same food group and used in at least 100 recipes.
