Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Leeks
Soften into sweet, mild body that thickens the soup as they break down.
Potatoes
Break down during simmering to give the soup body and a creamy texture.
Cremini mushrooms
Add savory, earthy depth and umami to the broth.
Shallots
Build a mild, sweet aromatic base when cooked gently in butter.
Milk or cream
Adds richness and a smoother, rounder mouthfeel at the end.

The step that matters

Adding the hot liquid to the blender. Blending very hot liquid can build pressure and cause it to splatter or burn. Let it cool slightly, fill the blender only partway, and vent the lid so steam can escape.
