What each ingredient does

Beef round steak or fillet
Provides the main protein; thin slicing keeps the raw meat tender and easy to chew.
Parmesan cheese
Adds salty, savoury flavour and a firm texture that contrasts with the tender beef.
Extra virgin olive oil
Adds fat and richness, carrying flavour across the salad and softening the lemon's sharpness.
Fresh lemon juice
Adds acidity that brightens the flavour of the beef and cheese.
Arugula (in the method)
Adds peppery, slightly bitter leaves that provide freshness and contrast to the rich beef.

The step that matters

Cutting the beef paper-thin. Raw beef is only pleasant when sliced very thin, because thin slices are tender and chew easily. Thick pieces of raw meat are tough and chewy, so a very sharp blade is needed.
