Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cornstarch
Thickens the milk as it heats, giving the vla its pudding-like body.
Cocoa
Provides the chocolate flavour and some colour to the vla.
Milk
Forms the liquid base that the cornstarch thickens into a custard.
Sugar
Sweetens the vla and adds to its smooth, rounded flavour.

The step that matters

Cooking the mix without burning. Cornstarch only thickens fully when the milk is brought to a simmer while stirred. Milk sugars and proteins scorch easily on the base of the pan, so constant stirring prevents burning.

Swap the cocoa

How well each one fits the dish's main ingredients (milk, sugar):

  1. Cocoathe original
  2. Almondfits about as well
  3. Chestnutfits about as well
  4. Peanutfits less well

Fit is the average pairing score against milk, sugar. Candidates are from the same food group and used in at least 100 recipes.
