Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Eggs
- Bind the dough and add structure and richness as they set.
- Brown sugar
- Adds sweetness, moisture and a caramel flavor, and helps the crumb brown.
- Butter
- Adds fat for a tender crumb and rich flavor.
- Flour
- Provides the main structure that holds the rusk together.
- Baking powder
- Releases gas during baking to lift the dough and lighten the texture.
- Almonds
- Contribute nutty flavor and a slight crunch to the crumb.
The step that matters
Add the dry ingredients gradually while beating. Adding the sifted dry ingredients a little at a time and beating after each addition blends them evenly into the wet mixture. This avoids lumps and dry pockets and keeps the dough smooth and evenly textured before it bakes.
