What each ingredient does

String beans
Form the main vegetable base and provide the bulk of the dish.
Mushrooms
Add savory, earthy flavor and body to the sauce as they soften.
Butter
Adds richness and carries the mushroom flavor when sautéing.
Flour
Thickens the cream into a smooth sauce as it cooks.
Light cream
Forms the creamy sauce that coats the beans and mushrooms.
Almonds
Add crunch and nutty flavor to the browned topping.

The step that matters

Cook the cream sauce over low heat. Flour thickens cream only as it gently heats; high heat can scorch the milk solids on the pan bottom or cause the sauce to curdle or turn lumpy. Stirring often keeps it smooth.

Swap the white pepper

How well each one fits the dish's main ingredients (beans, sugar, mushroom, butter, flour, cream, lemon):

  1. Nutmegfits better
  2. Cinnamonfits better
  3. Thymefits better
  4. White pepperthe original

Fit is the average pairing score against beans, sugar, mushroom, butter, flour, cream, lemon. Candidates are from the same food group and used in at least 100 recipes.
