What each ingredient does

Beef sirloin steaks
Forms the main body of the dish, cooking to a tender, savoury meat base when pounded thin.
Egg
Binds the flour and bread crumbs so the coating adheres to the steak.
Bread crumbs
Form a crisp outer crust that browns when fried in butter.
Butter
Conducts heat for frying and promotes browning and a rich flavour on the coating.
Svenbo or danbo cheese
Melts inside the folded steak, adding richness and a savoury, salty flavour.

The step that matters

Coating the steaks. Flour must be dry-dusted first so the egg can stick, and the crumbs need firm pressure to adhere. Gaps let the coating separate or burn during frying.
