What each ingredient does

Salsify
Is the main vegetable, becoming tender and mild when simmered until soft.
Flour
Whisked into the cooking water to lightly thicken the liquid around the salsify.
Unsalted butter
Adds richness and a smooth, silky coating when mixed with the mustard.
Dijon mustard
Adds sharp, tangy flavor that cuts through the richness of the butter.

The step that matters

Keep the cut salsify in acidulated water. Salsify discolors quickly once cut because its exposed flesh oxidises when it meets air. Lemon juice in the water slows this browning, keeping the pieces pale and appealing until they are cooked.

Swap the mustard

How well each one fits the dish's main ingredients (lemon, flour, butter, pepper, parsley):

  1. Shallotfits better

Fit is the average pairing score against lemon, flour, butter, pepper, parsley. Candidates are from the same food group and used in at least 100 recipes.
