What each ingredient does

Eggs
Whites beaten to stiff peaks lighten the batter and give the waffles an airy rise.
All purpose flour
Forms the starch and gluten structure that sets the waffle's body.
Baking powder
Releases gas in the batter to make the waffles rise and turn tender.
Baking soda
Reacts with the acidic sour cream to add lift and help browning.
Sour cream
Adds moisture, tang and tenderness to the batter.
Butter
Adds richness and flavor, and helps the waffles brown.

The step that matters

Fold in the beaten egg whites gently. Stirring or deflating the whipped whites knocks out the air that gives lift, leaving dense waffles. Folding in gently keeps the batter light.
