What each ingredient does

Button mushrooms
Form the main body of the curry and absorb the spiced gravy as they cook.
Milk
Adds creaminess and mellows the acidity of the tomato puree in the gravy.
Onion
Browning builds sweetness and savory depth as the base of the gravy.
Tomato puree
Provides acidity and body that forms the base of the gravy.
Maida
Thickens the gravy slightly so it clings to the mushrooms.
Fresh cream
Adds richness and a smooth, silky texture to the finished curry.

The step that matters

Pour the milk and let it cook until the gravy thickens. Milk added to a hot acidic tomato base can curdle or split if it boils hard. Lowering the heat and stirring steadily keeps the gravy smooth and creamy.
