Why it works: Lime and coriander match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 3,536 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓
Easy Chicken Cutlets
Ingredients
Directions
Cook the chicken
Clean and cook the chicken with salt, turmeric powder, lime juice (or vinegar), pepper powder, chilli powder and coriander powder.
Remove when the meat is tender.
Pick all the bones away and add the mashed potatoes.
Blend this in a mixer-grinder for about a minute.
Make the filling
Heat oil in a kadai and season with spices.
Saute onions and green chillies.
Add a teaspoon of ginger-garlic paste.
Add the chicken-potato mix and saute well.
Check it for taste.
Remove and allow it to cool.
Shape and fry
Now make oval shaped cutlets.
Dip in the beaten eggs and roll in the bread crumbs.
Deep fry (to prevent least absorption of oil, freeze for about 2 hours before frying) and serve with tomato ketchup.
Bread and finish
Roast 4 slices of bread in an empty kadai in low heat until the bread hardens.
Remove and beat in a mixer-grinder.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Chicken
- Forms the main body of the cutlet and gives it its meaty structure.
- Boiled potatoes
- Add moisture and softness, helping the mixture hold together.
- Eggs
- Bind the coating so the bread crumbs stick to the cutlet.
- Bread crumbs
- Form a crisp, golden outer coating when deep fried.
- Onions
- Add sweetness and aroma to the filling as they cook down.
- Lime juice or vinegar
- Adds acidity that brightens the flavour of the chicken.
The step that matters
Freezing the shaped cutlets before deep frying. Chilling firms the coating so it stays intact in hot oil and absorbs less oil. Frying unchilled cutlets can break apart and soak up more fat.
