Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Maida
Forms the dough wrapper that encloses the filling and crisps when fried.
Potato
Adds starch and body to the filling, helping it hold together inside the roll.
Carrot
Adds sweetness, colour and moisture to the vegetable filling.
Onion
Builds savoury flavour as it softens and browns in the oil.
Rice flour
Makes the dough crisper and lighter after frying.

The step that matters

Frying until golden brown. Frying in hot oil until golden brown crisps the dough and cooks the filling through. Oil that is too cool makes the rolls greasy and soggy inside.
